Linda Simon is a true believer in great tasting healthy meals. She knows that eating well really is the best health insurance. She is a registered dietitian with over 17 years experience in special dietary needs and 8 years experience as a personal chef. She can help you enjoy meals, whether you want a weight loss, cardiac, diabetic, gluten free, renal, or other special meal!

One of Linda's pastimes is developing recipes to fit special needs. Would you like to hide veggies in meals your family will love? Her winning recipes include Cheddar Chunk Meatloaf that includes minced onions and mushrooms to flavor, moisten, and tenderize. Are you trying to increase whole grains and fiber? And do you love sweets, but would like to reduce your sugar intake? Try awesome Banana Bread, or Wild Blueberry Crisp. Both are made with whole-wheat pastry flour, naturally sweet fruit, and Splenda instead of sugar. Do you want to eat more soy? Finish your meal with luscious Peanut Butter Pie, Chocolate Mousse, or Key Lime Mousse, all made with blended silken tofu. Do you long for "normal" gluten free baked goods? Linda's clients have repeatedly asked her to open a gluten free bakery so more could enjoy her tasty treats.

She also loves traveling to foreign cooking schools and introducing clients to authentic recipes and ingredients. A trip to Cuernavaca Mexico taught her to use many wonderful ingredients-tomatillos, hibiscus flowers, quajillo chiles…

As a dietitian, Linda has provided nutrition counseling for people on dialysis, in hospitals, and nursing homes. As a personal chef, she has met the unique needs of families, singles, and seniors. She can help you with convenient, healthy, delightful dishes.

Her family now includes two grown daughters and a husband. And Linda has provided childcare to preschoolers in the past. So she can help feed you and yours with recipes that are tested and approved, even if you don’t need a special diet.

She is ServSafe certified and a member of the American Dietetic Association, and the Celiac Sprue Association.
